Description

Air Fryer Baby Potatoes are a quick and easy side dish. Just toss with oil and simple seasonings and air fry until golden, crispy and tender!


Ingredients

  • 1 1/2 pounds baby potatoes, halved
  • 1 1/2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon fine sea salt
  • Chopped fresh parsley to garnish

Instructions

  1. Cut the potatoes in half and add them to a large bowl.
  2. Toss with oil and seasonings until well coated.
  3. Place the potatoes in the air fryer basket. (It’s okay if the potatoes overlap, but don’t overcrowd the air fryer).
  4. Air fry on 400F for 18-20 minutes, or until fork tender and crispy. Stop to shake the basket a few times to rotate the potatoes around.


Notes

  1. I used red baby potatoes, but baby gold are great too.
  2. You can air fry the baby potatoes whole, just add an extra 5 minutes to the air frying time.
  3. If you don’t have pre-washed potatoes, make sure you wash and scrub your potatoes and then pat them dry with a towel before seasoning them.
  4. I used a Cosori 5.8 quart air fryer for this recipe. If you have a different size, brand or model of air fryer, you may need to adjust the temperature and/or air frying time slightly.
