Ingredients

  • 2 medium-sized Russet potatoes about 1 pound
  • 3 cups cold water enough to cover the potatoes
  • 1 ½ tablespoons extra virgin olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt

Instructions

  • Scrub the potatoes clean and cut them into ¼-inch slices.
  • Place them in a large bowl of cold water and let soak for at least 30 minutes.
  • Drain the water and use a clean, lint-free tea towel to pat the potato slices dry.
  • Dry the bowl the potatoes were soaking in and place them back in.
  • Toss the potatoes with the oil.
  • Preheat air fryer at 400F for 5 minutes.
  • In a small bowl, stir together the seasonings and cornstarch. Sprinkle it over the oiled potato slices and use your fingers to make sure they are evenly coated and that all the cornstarch is rubbed into the potatoes.
  • Place the potatoes in the air fryer basket and air fry on 400F for 20-25 minutes, shaking the basket a few times to ensure even cooking.
  • Serve immediately.

Notes

  1. Cut the potatoes in roughly the same size slices. This will help them cook evenly. 
  2. If you cut them thicker than ¼-inch, they will take longer to air fry. If you cut them too thin, they will cook quicker but may be too dry.
  3. I keep the skins on the potatoes for extra crispiness, but you can peel them if you prefer.
  4. After soaking, it's important that the potatoes are well dried before being oiled and seasoned. 
  5. You don't need to air fry the potato slices in a single layer, but you shouldn't overcrowd and fill up the basket.
