Chocolate Chai Spice Crumble Bars are loaded with oats, coconut, almond butter, honey and chai spice, and have a delicious dark chocolate ganache filling! So good, you won’t be able to resist eating dessert for breakfast!

1 cup steel-cut oats
1 cup rolled oats
1 cup coconut, shredded and unsweetened
1/4 cup coconut sugar
2 tsp chai spice (see note)
1/2 tsp kosher salt
1/2 cup almond butter
1/2 cup honey
1–1/2 cups mini dark chocolate chips
3 tbsp almond butter
Pre-heat oven to 350 degrees and grease a 9-inch square pan.
In a medium-sized bowl, combine the oats, coconut, sugar, chai spice and salt and stir until combined.
In a microwave safe bowl, stir together the almond butter and honey until smooth. (If your almond butter is thick, you may need to microwave the almond butter/honey mixture for 30 seconds).
Add the almond butter/honey mixture to the dry ingredients and stir until well combined. You may need to get your hands in there to ensure the dry ingredients are well incorporated.
Add just over half of the oatmeal crumble mixture to the prepared pan, and press down to form a firm bottom layer.
In a small microwave safe bowl, add the chocolate chips and almond butter and microwave in 20 second intervals until the chocolate is melted and smooth. Stir the chocolate in between intervals. This may take 3-4 intervals.
Pour the chocolate over the oatmeal crumble layer and spread until evenly distributed. Sprinkle the remaining crumble mixture over the chocolate and press down lightly. Don’t worry if the crumble doesn’t completely cover the top.
Bake for 20-22 minutes.
Remove from the oven and let cool in the pan. You may wish to drizzle some additional melted dark chocolate over the bars. This is totally optional, but I think it adds a nice finishing touch. Once fully cooled, cut into bars and store in an airtight container in the refrigerator. You can also freeze for later enjoyment.
