I don’t often see fingerling potatoes around here, so when I spotted bags at the grocery store recently, I had to get them. And, of course, like most potato recipes in my house, they ended up in the air fryer!
This fingerlings air fryer recipe is a mash up of two of my go-to potato recipes – air fryer baby potatoes and air fryer parmesan potatoes. Prepped in much the same way as baby potatoes and seasoned with freshly grated parmesan for extra crispiness!
What makes this fingerling potatoes recipe so good?
- Roasting fingerlings in the air fryer is quicker than roasting in the oven.
- Leftovers are delicious. In just a few minutes, they reheat to crispy perfection in the air fryer!
- Ultra crispy thanks to the addition of grated parmesan.
- You can serve them like fries with your favorite dip (like this cashew red pepper dip) or as a side dish with your favorite protein (like this pork schnitzel).
Ingredients and substitutions
Below is a brief overview of the ingredients and recommended substitutions. The recipe card at the end of this post includes the exact quantities used.
- Fingerling potatoes – These are mini potatoes that are short and narrow. They are lower in starch and waxy with a creamy texture when cooked. Their thin skin is also perfect for roasting.
- Oil – Olive oil, avocado oil or canola oil all work.
- Seasonings – I used garlic powder and onion powder but you can also change it up with dried herbs like oregano or different spices like smoked paprika, chili powder or cumin.
- Rosemary – We like to use fresh rosemary as it’s fragrant and adds amazing flavor to potatoes. You can also use dried rosemary, just make sure to crush it up and add it along with the other seasonings before air frying. You’ll only need to use 1 teaspoon of dried rosemary as it is more potent than fresh. Instead of rosemary, fresh or dried thyme would also work nicely.
- Parmesan – For the best flavor and texture, freshly grated parmesan cheese works best. Grana padano also works as a substitute for parmesan. Finely shredding it will also ensure it sticks to the potatoes well. I don’t recommend the shelf stable powdered parmesan for this recipe.

Storage and reheating
These potatoes are delicious as leftovers! Just store them in an airtight container in the fridge and enjoy within 3-4 days.
To reheat, simply air fry on 400F for about 5 minutes, or until hot and crispy.
Key recipe tips
- After you wash the potatoes and scrub them clean, make sure you dry them well. Wet potatoes won’t crisp up as nicely.
- The potatoes don’t need to be air fried in a single layer. You can overlap them, just be careful not to fill up the basket.
- Stopping the air fryer a few times during cooking and shaking the basket will rotate the potatoes around and help them crisp up more evenly.
- If you’re worried about the grated parmesan sticking to or falling through the air fryer basket, you can use parchment paper liners. (This isn’t usually an issue for my air fryer so I don’t bother using the liners).
- We like how fragrant rosemary is, so we toss it in with the potatoes just before serving. You can also add it before air frying, which will minimize how fragrant it is.
- This recipe was tested in a Cosori 5.8 quart air fryer for this recipe. If you have a different size, brand or model of air fryer, you may need to adjust the temperature and/or air frying time slightly.

Fingerlings are small, short and narrow potatoes that have a thin skin. They’re also low starch and waxy.
The skin on fingerlings is thin, so there is no need to peel them. The skin also adds to the crispy texture. Just make sure to scrub them clean and dry well.
No need to soak them. I usually soak starchy potatoes like russets to remove some of the starch and help crisp them up. Since fingerlings are more waxy and less starchy, there is no need to soak them. The parmesan cheese will also help to crisp them up.
If you cut them in half, they will air fry faster, but you can air fry them whole. Just add another 6-8 minutes to the air frying time.
Absolutely. You can use baby potatoes or full size potatoes. If using full size, you’ll need to cut them into smaller pieces. Depending on the size of your potatoes, you may need to reduce the air frying time a little.
Yes, you can leave out the parmesan cheese. The parmesan adds flavor and a little extra crunch, but you can leave it out to make this recipe dairy-free.

Ingredients
- 1 1/2 pounds fingerling potatoes
- 1 1/2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon fine sea salt
- 1/3 cup grated fresh parmesan cheese
- 1 tablespoon chopped fresh rosemary
Instructions
- Scrub the potatoes clean and dry well with a paper towel.
- Cut the potatoes in half lengthwise and add them to a large bowl.
- Toss with oil, garlic powder, onion powder and salt.
- Place the potatoes in the air fryer basket.
- Air fry on 400F for 15-20 minutes, or until almost fork tender. Stop the air fryer to shake the basket a few times. This will help to evenly crisp up the potatoes.
- Sprinkle on the parmesan and air fry for another 5 minutes, or until the potatoes are golden brown and crispy.
- Top with fresh chopped rosemary and serve.
