We love our air fryer and use it pretty much everyday. If we’re not making these seasoned potato slices in it, we’re probably making these air fryer baby potatoes, air fryer potato wedges or air fryer home fries.
Air fryer potato recipes are a go-to for us! Our new faves include these air fryer potato cakes, air fryer parmesan potatoes and air fryer sweet potato wedges.
These potato slices are perfect on their own with some chipotle dip, or serve them on the side with jalapeño turkey burgers, crispy breaded air fryer cod or these whole baked chicken wings from One Pot Only!

Details on the ingredients
Potatoes – You’ll need 2 medium-sized russet potatoes (about 1 pound), scrubbed clean with the skin left on and cut into 1/4-inch thick slices. (You can also peel the potatoes, if you prefer).
Cold water – For soaking the potatoes before air frying.
Oil – I normally use olive oil or extra virgin olive oil but you can use the oil of your choice.
Seasoning – The potatoes are seasoned with a simple mix of dried oregano, basil, garlic powder and salt. Feel free to change up the seasonings with different herbs and/or spices.
Cornstarch – Tossing the potatoes with some cornstarch will help crisp them up.
How to cook potato slices in the air fryer
Scrub your potatoes clean and cut them into 1/4-inch slices.
Place them in a large bowl of cold water and let them soak for at least 30 minutes.
Drain the water and use a clean, lint-free tea towel to pat the potato slices dry.
Dry the bowl the potatoes were soaking in and place the potatoes back in. Toss them with oil.
Meanwhile, preheat your air fryer at 400F for 5 minutes.
In a small bowl, stir together the seasonings and cornstarch. Sprinkle it over the oiled potato slices and use your fingers to make sure they are evenly coated and that all of the cornstarch is rubbed into the potatoes.
Place the potatoes in the air fryer basket and air fry on 400F for 20-25 minutes, shaking the basket a few times to ensure even cooking.
Serve immediately with your favourite dip!
How do you get crispy potato slices?
There are a few ways to ensure your sliced potatoes get crispy:
- After soaking, it’s important that the potatoes are well dried before being oiled and seasoned.
- Adding a tablespoon of cornstarch also helps get them crispy.
- And lastly, you can always air fry them for an extra five minutes to get them ultra golden brown and crispy.
Frequently asked questions
I prefer starchy potatoes like russet potatoes which are low in moisture with a thick brown skin and white flesh. You can also use Yukon gold, which are a little less starchy with yellow flesh. I would avoid waxy potatoes like red potatoes as they’re higher in moisture.
No! You just need to soak, season and air fry.
Soaking the potato slices in cold water before air frying releases the potato starches and helps achieve a crispy texture.
For about 1 pound of potatoes cut into 1/4-inch slices, they take about 25 minutes to air fry. This time may vary depending on the size, brand and model of your air fryer. For instance, if your air fryer is small and the potatoes are crowded in the basket, they will take longer to air fry. Also, if you cut the potatoes into thicker slices, they will take longer to cook.
I used a Cosori 5.8 quart air fryer for this recipe. If you have a different size, brand or model of air fryer, you may need to adjust the temperature and/or air frying time slightly.
Storing and reheating leftovers
While these crispy potato slices are best served immediately, if you have leftovers, you can store them in an airtight container in the fridge for 3-4 days.
To get them crispy again, place them on a baking sheet in the oven or pop them back in the air fryer for a few minutes to reheat. Be careful not to reheat for too long as they will dry out. I don’t recommend reheating them in the microwave.
What to serve with air fryer potato slices
For snacking, we love them with ketchup, honey mustard or homemade dips like this cashew mayo, roasted red pepper dip or creamy jalapeño dip.
For meals, serve them on the side with air fryer chicken patties, air fryer pork schnitzel or air fryer turkey burgers.
For brunch, I think they would be great with a crustless asparagus quiche or sweet potato frittata.
If you have kids, these air fried potato slices would be the perfect side to air fryer chicken bites or air fryer mini pizza!
Recipe variations
- Keep it simple with a little salt and pepper.
- For a smoky flavour, add some smoked paprika, chipotle powder or cumin.
- To spice it up, use some Cajun seasoning or chili powder, or for extra heat add a dash of cayenne pepper or crushed red pepper flakes.
- Try a pre-made spice mix like Italian seasoning, everything but the bagel seasoning or chili lime seasoning.
- Sprinkle some parmesan cheese on before serving, or top with crumbled bacon, cheddar cheese, green onions and/or sour cream.
- Treat them as nachos and load them up with your favourite toppings.
Key recipe tips
- Size of potato slices. I found 1/4-inch was the ideal size. They cook quickly and still maintain a fluffy and tender centre. If you cut them thicker, they will take longer to air fry. If you cut them too thin, they will be too dry.
- Even slices. Cut the potatoes in roughly the same size slices. This will help them cook evenly. I just used a knife but you can also use a mandoline to ensure even slices.
- Potato skins. I normally keep the skins on for air fryer potatoes so they get extra crispy, but you can peel them if you prefer.
- Pat potatoes dry. After soaking, it’s important that the potatoes are well dried before being oiled and seasoned.
- Don’t overcrowd the air fryer. You don’t need to air fry the potato slices in a single layer, but you shouldn’t fill the basket and overcrowd the potatoes.
- Shake basket. You’ll need to shake the air fryer basket a few times and rotate the potatoes so the slices on the bottom of the air fryer come to the top.
