With the holidays quickly approaching, I’m in brunch planning mode. It’s my favourite meal to prepare, so naturally, when it comes to entertaining, I usually opt for brunch.
And while I create and share brunch dishes on Crumb Top Baking year round, the holidays are particularly special. So when Grimm’s Fine Foods asked me to create a recipe with their Kolbassa Sausage Bites, I knew it had to be a hearty brunch dish.
Grimm’s products are all made in Canada. They’re gluten, lactose and soy free with no MSG added, and they don’t use any fillers or by-products. We’ve been long-time fans of their lean turkey pepperoni, and now we’re fans of their kolbassa sausage bites too.
I’ve been making this sausage frittata with peppers and onions for the past few weeks, and I’m looking forward to sharing it with family and friends over the holidays.

What is a frittata?
A frittata is similar to an omelette or crustless quiche in that it’s a dish made with eggs, veggies, meat and/or cheese. However, a frittata is prepared a little differently. It’s typically cooked on the stove top in a cast iron skillet, and once the egg starts to set around the edges, it’s quickly transferred to the oven and broiled until the egg is fully set.
Ingredients to make sausage egg frittata:
- Grimm’s Fine Foods Kolbassa Sausage Bites
- Extra virgin olive oil
- Red onion
- Red and green pepper
- Jalapeño pepper
- Garlic
- Eggs
- Salt and pepper
- Crushed red pepper flakes
How to make this sausage frittata recipe:
- Slice your sausage bites into 1/4-inch pieces and add them to a cast iron skillet with some oil. The sausages are pre-cooked, so you just need to brown them on both sides. This will take about 5-7 minutes over medium heat. Once browned, transfer to a plate and set aside.
- Add your chopped peppers and onions to the skillet, along with some more oil, and sauté for 2-3 minutes or until they start to soften. Add in your minced garlic and cook for another 2 minutes. Add the sausage back to the skillet.
- Whisk together the eggs, salt, red pepper flakes and pepper. Pour over the sausage mixture and cook on medium-low for 5-7 minutes. I like to swirl the egg around the edges of the pan to help it seep down around the frittata and cook quicker.
- Once the egg is almost set, place the frittata in the oven and broil for 2-3 minutes, or until the eggs are fully cooked and the frittata is browned on top.

- What do you serve with a frittata? While frittatas are usually hearty enough to enjoy on their own, you can also pair them with a side salad or roasted potatoes.
- Can you make this frittata in advance? If you’re looking to make this for a brunch gathering, I would cook and serve it right away. But if you’re looking to meal prep it, you can make it in advance. Once cooked, just cut the frittata into slices and place in individual glass containers. Cover and store in the refrigerator and enjoy within 3-4 days.
- Can you freeze this sausage frittata? Yes, just place slices of the frittata in individual glass containers, cover and let cool in the refrigerator. Once cooled, place them in the freezer. They should last for up to 3 months. When ready to enjoy, defrost for a few hours in the refrigerator before reheating.
- How do you reheat leftover frittata? Just place the desired amount of frittata in a microwave safe dish and heat it in the microwave until the frittata reaches your desired temperature.
Additional tips for making this sausage egg frittata:
- As you’re broiling the frittata in the oven at the end, make sure you’re using an oven safe skillet or pan.
- This frittata has a spicy kick, so if you’re not a fan of spicy, just reduce or leave out the jalapeño pepper and crushed red pepper flakes. If you like it spicier, just add more.
- The frittata will puff up a bit while broiling and start to brown. Keep a close eye on it as it can start to burn quickly under the broiler.
- Once removed from the oven, let the frittata sit for a few minutes before slicing and serving. The frittata will sink a bit and the edges will pull away from the sides of the skillet. That’s okay. This will make it easier to slice and lift out of the skillet without sticking.
- Speaking of sticking, make sure the bottom and sides of your skillet are well oiled. This will also help prevent the frittata from sticking to your skillet.

Ingredients
- 2 tablespoons extra virgin olive oil, divided
- 2 cups sliced Grimm’s Fine Foods Kolbossa Sausage Bites (1/4-inch thick)
- 1 cup chopped red onion
- 3/4 cup chopped red pepper
- 3/4 cup chopped green pepper
- 1/4 cup chopped jalapeño pepper
- 3 cloves garlic, minced
- 6 large eggs
- 1/2 teaspoon kosher salt
- 1/4 teaspoon crushed red pepper flakes
- 1/8 teaspoon ground black pepper
Instructions
- Add 1 tablespoon of oil to a 10-inch cast iron skillet and heat over medium heat.
- Add the sausage slices to the skillet and brown on both sides. This should take about 5-7 minutes. Transfer to a plate and set aside.
- Carefully grease the bottom and sides of the skillet with the remaining 1 tablespoon of oil. Add the chopped peppers and onions and sauté for 2-3 minutes, or until they start to soften. Add in the garlic and cook for another 2 minutes, stirring frequently to ensure the garlic doesn’t burn.
- Add the sausage back in and stir everything around to ensure even distribution.
- In a medium-sized bowl, whisk together the eggs, salt, red pepper flakes and pepper. Pour over the sausage mixture. (You may need to reduce the heat to medium-low to ensure the frittata doesn’t burn on the bottom. You can also swirl the egg around the edges of the pan to help it seep down around the frittata and cook quicker).
- Cook for 5-7 minutes, or until the eggs start to set around the edges.
- Place the frittata in the oven and broil for 2-3 minutes, or until the eggs are set and the frittata is browned on top.
- Remove from oven and let rest for a few minutes before cutting into slices and serving.
- Store any leftovers in an airtight container in the refrigerator and enjoy within 3-4 days.
