I’m forever using my air fryer to whip up easy side dishes for dinner, and I keep coming back to these air fried potato wedges.

Potatoes – You’ll need 3 medium-sized russet potatoes, scrubbed clean with the skin left on.
Cold water – For soaking the potatoes before air frying.
Oil – I used extra virgin olive oil but you can use your preferred oil.
Lemon juice – A little lemon juice adds a pop of fresh, tart flavour. Be sure to use freshly squeezed lemon juice instead of bottled juice.
Oregano and basil – I prefer dried herbs for air frying as they stick to the potatoes better than fresh herbs. They’re also more potent so a little goes a long way. Fresh herbs will not work well in this recipe.
Garlic powder – I always love a little garlic powder with my potatoes, and it pairs nicely with the lemon and herbs.
Salt – This recipe doesn’t over do it on the salt so feel free to add more to suite your taste.
How to make potato wedges in the air fryer
- Scrub your potatoes clean and cut them lengthwise into 8 wedges per potato.
- Place them in a large bowl of cold water and let them soak for at least 30 minutes.
- Drain the water and use a clean, lint-free tea towel to pat the potatoes dry.
- Dry the same bowl the potatoes were soaking in and place the potato wedges back in the bowl.
- Add the oil, lemon juice and seasonings and toss to combine until all of the wedges are well coated. (I usually use my hands to mix everything together).
- Place the wedges in the air fryer basket and air fry on 400F for 20-25 minutes, shaking the basket a few times to ensure even cooking.
- Serve immediately while the wedge fries are hot and crispy.
What type of air fryer was this recipe tested in?
This recipe was tested in a 2.75 quart Philips basket-style air fryer and in a larger capacity Cuisinart air fryer/toaster oven-style.
The Philips is a smaller capacity so the potatoes were overlapping and took about 25 minutes to get fork tender and crispy.
Since the Cuisinart is larger capacity, I was able to spread out the potato wedges, so they only took about 20 minutes to fully cook.
Depending on the size, brand and model of your air fryer, you may need to adjust the temperature and cook time slightly.
Frequently asked questions
Russet potatoes are commonly used for french fries and potato wedges. They’re starchy with a thick brown skin and white flesh. The skin is the perfect texture for making crispy wedge fries, and the flesh creates a soft and pillowy centre.
The key to wedges is cutting the potatoes lengthwise and cutting them into thick slices. Wedges should be long like french fries, but much thicker. To achieve this shape, cut each potato in half (lengthwise) and then quarter each half (lengthwise). You should get 8 wedges out of each potato.
Soaking the potato wedges in cold water before air frying releases the potato starches and helps achieve a crispy texture. I’ve skipped this step in the past and the wedges just didn’t turn out as crispy.
In addition to soaking the potatoes in cold water, you’ll also want to make sure you pat them dry after they’ve been drained of water. Too much moisture in your potatoes will result in soggy wedge fries. Keeping the skins on also helps create an extra crispy texture.
For this recipe, 3 medium-sized russet potatoes resulted in 24 wedge fries. I air fried them all at once in a small air fryer basket. Since they were overlapping, they took close to 25 minutes to get fork tender and crispy. If you air fry the potato wedges in a single layer, they will take about 18-20 minutes to fully cook, but this will require air frying them in batches or using a larger capacity air fryer.
Recipe variations
- Keep the wedge fries simple with just salt and pepper as seasoning.
- Spice them up with some Cajun seasoning, cayenne pepper, chili powder or chili flakes.
- Add a smoky flavor by using some smoked paprika, cumin or chipotle seasoning.
Additional recipe tips
- Cut the potatoes in roughly the same size wedges for even air frying.
- If you cut your potatoes into larger wedges, they will take longer to cook. Smaller wedges will air fry faster.
- I keep the skins on the potatoes for extra crispiness, but you can peel them if you prefer.
- You can cut back on the oil in this recipe, but the potatoes will be a little less crispy.
What to serve with wedge fries
For snacking, I love pairing them with this creamy jalapeño dip, cashew mayo or chipotle dip.
For meals, serve them on the side with air fryer salmon, crustless asparagus quiche, air fryer quiche or sweet potato frittata.

While I haven’t explored our air fryer much yet, I can confirm you can make some of the best tofu and potatos in it! These potato wedges look fantastic – perfectly golden and crisp and delivering wonderful flavours!
