Who doesn’t love a quick and easy side dish that requires minimal prep time and ingredients?!
This air fryer roast potato recipe has been a favourite of ours for a while. The potatoes turn out soft and tender in the middle and the skin gets nice and crispy on the outside. And the best part? You don’t need a lot of oil, so these potatoes make a deliciously healthy addition to just about any meal.

- Baby potatoes
- Lime juice
- Extra virgin olive oil
- Chili powder
- Sea salt
How to roast potatoes in the air fryer
- Cut the baby potatoes in half and add them to a large bowl. Coat them with lime juice and drain off any excess juice.
- Add the remaining ingredients and toss the potatoes until well coated.
- Arrange the potatoes in a single layer in your air fryer basket and air fry on 400F for 15-18 minutes.
Are air fried potatoes healthy?
Potatoes on their own are a great source of vitamins and minerals. While adding oil does add calories, this recipe only calls for one tablespoon of oil. So one serving of these potatoes (about 2/3 cup) is 95 calories and a good source of fibre and vitamin C (see nutrition info in the recipe card below).
Do you need to boil the potatoes first? Can you air fry raw potatoes?
No need to boil the potatoes first. Just season them raw and place them in the air fryer.
What’s the best temperature for air frying potatoes?
While I usually set my air fryer to 350F for many recipes, I find these potatoes achieve the best texture in the quickest amount of time at 400F.
Does it matter what kind of air fryer I use?
I’ve made this recipe in both the Cuisinart air fryer/convection/toaster oven and the Philips air fryer, and there was no difference in the temperature settings or air frying time. The only difference is capacity. The Philips is smaller, so I opted to air fry the potatoes in two batches. If your air fryer has a smaller capacity, you can also just half the recipe.
How do you reheat air fryer potatoes?
While these potatoes are best served immediately, if you have any leftover you can store them in an airtight container in the refrigerator for 3-4 days. To get them crispy again, just place them on a baking sheet and reheat in the oven, or pop them back in the air fryer for a few minutes. I don’t recommend reheating them in the microwave.
Recipe tips and substitutions
- I used pre-washed baby potatoes in this recipe in order to save time. If you don’t have pre-washed potatoes, just make sure you wash and scrub your potatoes and pat them dry with a towel before seasoning them.
- I used a mix of red, yellow and blue potatoes, but you can use whatever variety you like.
- I like to cut the baby potatoes in half, but you can also air fry them whole. Just note that you may need to increase the air frying time by a few minutes depending on the size of your potatoes.
- If you don’t have baby potatoes, you can use regular-sized potatoes and cut them into roughly 1-inch chunks.
- This recipe uses a chili lime seasoning, but you can change it up and use different herbs and spices. A simple garlic, salt and pepper blend is also delicious.
- You’ll want to time your potatoes so they’re ready when you’re ready to eat. If they’re left sitting for too long, they will lose some of their crispiness.
Ways to serve these baby potatoes
We love them with a selection of dips. This creamy jalapeño dip is a current fave. We also enjoy this chipotle dip and this roasted red pepper dip.
If you’re going the side dish route, these potatoes work nicely with jalapeño turkey burgers, air fryer turkey burgers or air fryer chicken patties.
They’re also a great option to pair with air fryer pork schnitzel, air fryer cod or this air fryer salmon!
And for brunching, I highly recommend them served up as spicy breakfast potatoes with a quiche, frittata or air fryer quiche.

Ingredients
- 4 cups baby potatoes, skin on, pre-washed and halved (see note)
- 1 lime, juiced
- 1 tablespoon extra virgin olive oil
- 1 tablespoon chili powder
- 1/2 teaspoon sea salt
Instructions
- Place potatoes in a large bowl and coat them with lime juice. Drain any excess juice.
- Add the oil, chili powder and sea salt and stir until potatoes are well coated.
- Arrange the potatoes in a single layer in the air fryer basket. Roast on 400F for 15-18 minutes, or until the potatoes are tender with crispy edges. You can check on them after 7-8 minutes and give them a shake or stir.
- Serve immediately (while hot and crispy).
Notes
- I used pre-washed baby potatoes in this recipe in order to save time. (They’re readily available at most grocery stores). If you don’t have pre-washed potatoes, just make sure you wash and scrub your potatoes and pat them dry with a towel before seasoning them. Note that this will add to the prep time for this recipe.
- Depending on the size of your air fryer, you may need to air fry these potatoes in two batches. You can also just half the recipe, or you can overlap the potatoes and increase the cooking time by a few minutes. Just make sure to toss them a few times to ensure even cooking.
